A really healthy breakfast meal. Pumpkin puree, coconut milk and spices give quinoa an extra rich and special flavoring.

Cooking Time: 12 minutes
Ingredients:
3½ cups filtered water
1¾ cups quinoa, soaked for 15 minutes and rinsed
14-ounce coconut milk
1¾ cups pumpkin puree
2 teaspoons ground cinnamon
1 teaspoon ground ginger
Pinch of ground cloves
Pinch of ground nutmeg
Salt, to taste
3 tablespoons extra-virgin coconut oil
Stevia, to taste
1 teaspoon organic vanilla flavoring
Directions:In a pan, add water and quinoa on high heat.
Cover and convey to a boil.
Reduce the temperature to low and simmer for about 12 minutes or till all liquid is absorbed.
Add remaining ingredients and stir till well combined.
Serve warm.
