 KORI ROTTI WITH CHICKEN CURRY


: Ingredients

Chicken 1 kg

: For masala


Coconut 1/2

Shallots 10
Garlic 12
Green chilies 2
Ginger 2 inch piece
Curry leaves 1 sprig
Pudina/Mint leaves 1 small bunch
Turmeric powder 1/2 tsp

: For Dry Roasting 

Red chilies 15
Coriander 2 tsp
Cloves 10
Cinnamon 1 inch piece
Bay leaf 1
Black peppercorns 10
Cardamom 3
Fennel seeds 1 tsp
Cashewnut 10
Khus 1 tsp
Oil/Ghee 3 tablespoons
Onions 3
Tomatoes 3
Salt to taste
Coriander leaves and mint leaves for garnishing

: Method

Dry roast the ingredients and grind to a fine paste with little water.
Heat 1 tablespoon Oil/Ghee in a Kadai. Add shallots and garlic. Saute till they are light brown in color. Add grated Coconut, 1 finely chopped tomato, green chilies, finely chopped ginger, curry leaves, mint leaves, and turmeric powder. Roast for a few minutes. Cool and grind to a fine paste.
Wash, clean and cut chicken into pieces. Chop onions and tomatoes lengthwise.
Heat 2 tablespoons oil/ghee and add onions. When they are translucent add tomatoes and saute for a few minutes. Then add the ground masalas. Saute for 2 minutes. Add chicken pieces. Mix well. Add salt and water. Cover and cook till done.
